Food is definitely one of the highlights of the festive season and nothing beats the smell of Christmas baking filling the house but if you don’t have a lot of time on your hands then these energy balls are a quick, alternative treat to whip up – they may not make your house smell as fragrant but what they lack in scent, they sure make up for in flavour – with the perfect balance of sweetness and spice they make the perfect after dinner treat or snack to tide you over until your roast dinner!
Spices are so synonymous with Christmas, which is why I created this recipe using the perfect blend of cinnamon, ginger and nutmeg. This is a quick and easy recipe to ensure that you have a stress free Christmas, using ingredients that you most likely already have in your cupboards and in order to keep costs down, I’ve used raisins in place of dates – but there’s definitely no comprising on taste! I doubt your friends and family will even notice that these are free of refined sugar, gluten and dairy plus with just 6 ingredients, they couldn’t be any simpler to make!
- cup of almonds
- cup of raisins
- 2 tsp cashew butter*
- 1.5 tsp cinnamon
- 0.5 tsp ground ginger
- 0.5 tsp nutmeg
- Using a blender or food processor, pulse the almonds until they reach a flour like consistency.
- Add the other ingredients to the blender along with the almonds and mix until well combined. The mix is ready when it begins to form one large ball.
- Take small amounts of mix and roll into balls – the mix yields around 10.
- Freeze for 30 minutes and then transfer to the fridge. They’ll keep well there for 1-2 weeks but I like to freeze batches so that I can mix and match flavours throughout the day. If doing this, simply transfer to the fridge around 30 minutes before eating and enjoy!
*If you don’t have cashew butter then feel free to substitute peanut or almond.
